CUL 203 - Nutrition for Food Service Professionals Credit(s): 3 2.5 class hours 1.25 lab hours An introductory course in human nutrition for the culinary arts student and food service professional. The course content focuses on the science of human nutrition as it relates to personal health, food preparation, menu planning, recipe modification, and the marketing of nutritious menu items within a commercial or institutional food service setting.
Prerequisite(s): CUL 100 , CUL 101 , CUL 115 , each with a grade of C- or better; a valid ServSafe Certificate or successful completion of CUL 111
